Vegan Smoked Gouda Mac and Cheese

Y'all.
This the one.
If you're a vegan on a health kick, do not enter the chat. This is vegan mac and cheese, soul food style done RIGHT—a number of tasty (vegan) cheeses, seasonings and other razzle dazzle baked to perfection. Just like Mommy used to make.

Except it's vegan. No animals were harmed in the making of this amazingly delicious, vegan, smoked gouda mac and cheese. <3
My sister stopped by my house and I warmed her up a bowl. In disbelief, she said "this vegan?!".

Ingredients
(Can multiply this all as needed)
3 cups elbow macaroni uncooked
2-3 tablespoons of vegan butter
1 ½ cups UNSWEETENED, original almond milk
1/2 cup of non-dairy half & half (I used the Forager brand from Whole Foods OR vegan heavy cream (unsweetened)
1 cup daiya shredded cheese "classic blend" (or any vegan shredded cheese blend)
1 cup vegan shredded cheddar"
salt & pepper to taste
6 tablespoons of JUST Egg
1.5 packages of the slices plant based smoked gouda (I used the 365 brand from Whole Foods), (I use a grater to shred this)
paprika optional
seasoned salt and pepper (to your taste)

Instructions
Preheat oven to 350
Cook macaroni until just al dente. Don't overcook
Drain pasta and set aside in your baking dish.
Stir butter in to hot macaroni
In a blender, blend together all ingredients until smooth— EXCEPT for 1/2 cup of the shredded plant based smoked gouda.
Taste to see if your cheese mixture has a good taste.
Once mixture is to your liking, pour most of the cheese mixture in to your cooked macaroni and stir.
Once thoroughly stirred, top with the remaining mixture and the remaining 1/2 cup of shredded plant based gouda.
Bake at 350 until all cheese is melted but do not overbake.
Allow mac and cheese to set and cool a little (about 10-15 minutes).
Serve and enjoy : )!
*Tips* Depending on where you live, most vegan shredded cheeses, I find at Jewel for sure (Go Veggie's brand tastes amazing to me). I sometimes see Daiya's brand of vegan cheese shreds at Walmart, but ALL of these items can be found at Whole Foods.
